I have a question.  In the recipe, when you say to keep beating when do you do that.  Sorry.  After you add the butter and cream?  I&#039;ve only ever made caramel syrup and I don&#039;t do anything but swirl the pot while it&#039;s boiling.  I&#039;m only asking because I&#039;m going to make these but don&#039;t want to mess them up.  Caramel is kind of hard for me since it&#039;s so humid here.
